What Should We Eat in Hue, Vietnam?
Hue is a small city in central Vietnam 3 hours north of Hoi An. It is not as popular as Hoi An, but that is what makes it less touristy and more personal. Their palaces and tombs around the city didn’t attract me to come to Hue, but their famous noodle soup Bun Bo Hue.
What is Bun Bo Hue?
Bun Bo Hue is a Vietnamese noodle soup that comes with many kinds of meat and vegetable. It is not the same as the phos we eat. On top of the taste of pho, it has a taste of spiciness and sourness as well. The broth is a combination of beef bones, beef shank with lemongrass seasoned with fish sauce and chili oil. Bun Bo Hue Is a Popular Noodle Soup that Has a Perfect Balance of Sweetness, Sourness, Spiciness and Saltiness
You can then choose to add any type of meat you want in the soup. It depends on the restaurant, but they will serve you from beef shank, oxtail, pig’s knuckles, brisket, meatballs, crab balls (or any kinds of balls) or congealed pig blood (which tastes like tofu). Like many other noodle soup in Vietnam, it will come with lime wedges, cilantro, onions, garlic and interestingly shredded banana blossom.
Where Should We Eat Bun Bo Hue?
If you are visiting Hue, you will probably see it everywhere. You can go anywhere around your hotel/hostel, but the real deal is at OTY in the old village of Hue. It can put you off with pig blood and the rough neighborhood, but if you are an adventurer, be there do that done that! But for y’all my softies, this is the list of must go places in Hue by the weirdness level.

OTY (Weirdness Level: 3/3)
- This is the must go place if you want to try the real Bun Bo Hue. It is not the easiest to find, and it probably is not near where you are staying (guessing, you are staying near the backpacker’s district). Most of the places near backpacker’s district is some what catering for the expats and foreigners. So, the Bun Bo Hue in this area is also kind of watered down with weird meat.
- OTY is definitely not for everyone’s taste. They will serve you from congealed pig blood to tendons and tripes. But this is what makes Bun Bo Hue taste so good. I grew up eating congealed pig blood and tripes, so it was no surprise to see it. And I do actually crave it occasionally. If you are feeling adventurous, you should definitely try it when you visit Hue, Vietnam.

Quan Cam (Weirdness Level: 2/3)
- It is close to the Backpacker’s district and a decent place for your crave of Bun Bo Hue.

Family Home Restaurant (Weirdness Level: 1/3)
- This restaurant is catered for the foreigners (obviously). This doesn’t have all the crazy pig blood to tendons, but only thin sliced beef. This is not the best, but the safest choice among the other restaurants. If you end up coming here, go for the spring roll as well. It is delicious.
How Do You Eat Bun Bo Hue?
- Choose your meat: Most of the places will serve you with meat already in it. But if you go to a local Bun Bo Hue restaurant, you can choose from different kinds of meat you want to put in.
- Put more or less chili oil and garlic for the spiciness of the soup
- Put banana blossoms and vegetable in the soup
- After finishing the noodles, ask for white rice to put it in the soup
Ok… How do you eat Bun Bo Hue was kind of stupid. I am sure you all would know how to eat a noodle soup. LOL.
